The highlights and farm philosophy can be summarized in this way:
In the vineyard:
Saving of ancient clones already cultivated in Villareggia from the X Century, Nebbiolo Canavese (Picotener) and Erbaluce di Caluso.
Organic and biodynamic agriculture thanks to the use of microorganisms and self produced macerates for the defense and natural fertility of the soils. Objective to enhance to the maximum the expression of our very particular terroir very loose soils 65% of sand and very large glacial skeleton already in the cultivation, which increases even more up to 95% of sand always with very large skeleton.
In the cellar:
Careful and natural vinification that respects and enhances our terroir, indigenous yeasts.
In refinement we mainly use the 7.5 and 16 hl amphora cooked at low temperature.
For our Erbaluce we use only the amphora while for our Nebbiolo also the large woods 25-50 hl and a 50hl truncated cone which we also use for the wines.
Comments: Grapes : 100% Nebbiolo.
Balanced acidity, full, harmonious, velvety and persistent taste.
Aging : 25 hl and 50 hl Austrian oak barrels and 16 hl and 7.5 hl amphorae 2 months in the bottle.
Comments: Distinct mineral profile. Aromatic complexity and freshness create a beautiful elegance. Ruby/garnet color, with intense red fruit and mineral aromas. The palate features cherry and strawberry, with balanced acidity, medium tannin, and a long, mineral-driven finish
Comments: Appearance : Intense and clear straw yellow
Smell : The aromatic profile is broad, intense aromas of acacia and wild flowers, notes of peach, pear and exotic fruit accompanied by spicy hints of hazelnut, almonds and honey.
