The late Dave Pickerell. Dave was instrumental in getting LOD off of the ground. Dave was the Master Distiller for Makers Mark for 15 years before leaving the company and starting his own consultancy business. The reason he agreed to work with us was because of our seed-to-spirit process, where we grow all the grain. He said, you are the next big thing in craft distilling. He assisted us with everything from our equipment to our mash bill, and taught us much of the art of distilling. His influence can be found in all of our Spirits. Sadly, Dave passed away in November of last year. One of his proudest and most notable creations was Whistlepig, and many say is is responsible for the start of the craft rye and bourbon renaissance. Nicole Austin was partners with Dave and was our engineer on our project. She assisted with equipment, work flow, mashing, grains, and mash bill as well. She is the General Manager and Master Distiller of Cascade Hollow
