Jean Christophe grew up working alongside his father, Jean-Louis, who was mindful about instilling the family traditional values in his son: dedication, care, patience, and the rigorous precision. It takes meticulous skill to produce champagne without the use of malo-lactics, in stainless steel tanks and with only indigenous yeasts, but that's what creates champagnes with the purest expression of his Bouzy terroir. Jean Christophe wouldn't have it any other way. Active in his community, ever conscious of the legacy he will eventually leave his three young children, Delavenne pushes the limits of integrated wine growing techniques, leaning toward organic culture practices.
