I DUE AIRONI (The Two Herons):Bologna, city in the central North of Italy, is famous throughout the world for its ancient university and most of all for its cuisine, including dishes such as tagliatelle (noodles), tortellini, lasagne and, above all, the renowned Ragu alla Bolognese (Bolognaise meet sauce.)The vineyard I Due Aironi (the Two Herons) is located just outside Castello di Serravalle in the hills surrounding Bologna. Pignoletto, autochthonous vine king of these territories, bears yellow-compact bunches of grapes, from which we produce three types of wine, which differ according to the techniques of cultivation and wine making: Still Pignoletto (production less than 10 T/ha), Sparkling Pignoletto (production less than 10 T/ha) and Classic Pignoletto (production less than 7 T/ha). Other cultivated vines are Cabernet Sauvignon, Merlot and Chardonnay. Currently the full production is of around 120,000 bottles/year, but we plan to double within three or four years.
