Our wines, are the result of the painstaking care we give to our organic vineyards – green pruning, providing shade in the weeks of intense sun, harvesting in 10 kg trays only in the cool early morning and selecting the grapes in the afternoons, cooling the grapes chosen, cold maceration and fermentation at 25º C with oscillations of only 0.1º C. The juice is gently extracted with a pneumatic press and aged for one year in barrels of French and American Oak.
