Firstly Sir Paz was just set up as a Hobby winery but after the first vintage we realized that the land had the perfect slope and soil for our wine. The surface area was extended, and now we produce 75000 bottle p.a. The grapes get massive amounts of sunlight, and the vines are planted on a rich belt of testa rossa soil.
We Believe that our wine is of premium quality. It has a distinctive Southern French wine style. Beautifully smooth and soft will good fruit up front, and a impeccable tannin structure.
Our 2003 Shiraz has been awarded a Silver medal at the International Wine and Spirit Competition 2005 London. Also a Gold at the Ballart Wine show in 05. James Haliday also rated our 2003 Shiraz 4.5 out of 5 stars. Very attractive, medium bodied, spicy style, a nice twist of red fruit, long finish, fine tannins.
We also product a lovely full bodied Merlot, As well as a fantastic light shiraz. Which we have bottle under our second label Silvan Hill.
