Santi Dimitri was eatblished in 1996 as a continuation of the old family agricultural business. It is divided into three estates with a total area of 121 hectares divided into 60 hectares of vineyard, 18 of olive-grove, 34 of arable land and 9 of ilex-grove (the former woodland of Salento). Since then we have devoted ourselves to the recovery of aboriginal varieties and the experimentation of new varietal selections in the vine-growing, olive-growing and cereal-growing sectors. We are a vertical business, our aim is to transform and commercialise only grapes and olives produced on the premises which have undergone an accurate selection process according to precise production plans. The vines we grow are: Primitivo, Negroamaro (our own selection), Aleatico, Merlot, Cabernet Sauvignon, Pinot Bianco, Fiano, Chardonnay. In the olive-growing sector we produce our native olive oil both from traditional innnovative olive types.
