Dolium is the first underground winery in Argentina, designed to produce small volumes of very fine wines.
It appointed Californian consultant Paul Hobbs and winemakers Andrea Marchiori and Luis Barraud (both of whom have worked in the Napa Valley) to produce wines that evoke the intense fruit and complexity of the California style. Since yr.2000, Paul Hobbs makes his own wines in Dolium too.
The winery has invested in the latest equipment, including moveable crushers, stainless steel tanks, and in new small French & American Oak barrels (which add to 40% of the total volume capacity).
The winery sells 85% of its wines abroad. Grapes come from the Lujan de Cuyo area, and are hand picked and carefully selected from vines that have been pruned to reduce yields and increase the level of extract. Long macerations and barrell malolactic fermentation follow.
