State of the art Distillery: 13 Tons/hour destemmer/crusher, pneumatic press, four 5,283 USGallon stainless steel refrigerated tanks, a Charentese copper STILL, 528 gallon pot. Still made in Cognac. Distills 476 gallons of PISCO daily.
PISCO is subject to a D.O.C. Supervision and Norms by a Peruvian Government Consumer Protection Agency (INDECOPI) and a Consejo Regulador del Pisco.
Maximum Methanol allowed is 100 Mililiters per liter of Anhidric Alcohol (A.A.). Ref: European Community allows up to 200 ml, and Grappa = 1,000 ml.
