Southeast of Villarrobledo towards El Provencio (in the heart of the up-and coming LA MANCHA region -the land of Don Quixote-SPAIN) is the beautiful 800-ha finca of PAGO DE LA JARABA, a 80-ha own single vineyard estate with a very well-equipped winery.
Harvesting by hand, organic fertilizer from our own sheep, careful vine canopy management and green harvesting, grape selection table...LA JARABA strives for grapes that are a little bit beyond the point of ripeness, assures that we always have ripe tannins. We want the wines to be warm, sweet and very drinkable.
Our wines are elaborated from selected grapes of Tempranillo, Cabernet Sauvignon and Merlot, assembled every year in the necessary and different percentage that allow us to achieve the desiderable wine -depending on the previous tasting and selection before the assemblage of varieties-. However the main variety is usually the indigenous Tempranillo, result of our deep knowledge of the vineyard and the indigenous varieties.
