She decided to not press by feet the white grapes and let them vinify in a stainless steel tank termoconditioned, and the red grapes of Montepulciano will be not desteamed by hand but will be fermented also in a wood cask, then one part aged in bottles and other part aged in barriques. Company Profile: Bodegas Hacienda la Jaula S.A. de C.V. is a small factory housed in an old Mexican Hacienda located in the northern part of Guanajuato state. The Hacienda is situaded in an area called El gran tunal, the name was given to it during the viceroyalty time, due to the exceptional cactus pear field that lies there.
The farm use to be devoted to the cultivation of hot red peppers, however; having such great cactus pears underexploited, in 1996, we set out to run the first experiments to distill cactus prickly pear wine, in the process we decided to make new products: The Cactus Prickly Pear Liqueur and Liquor… Cópil and El Gran tunal
The production is limited due to both: the size of the facilities and the manufacturing process wich is mostly hand made. The prickly cactus pears have a short harvesting period during the summer only.
